I've cut ground beef completely out of our diet. We have meat ground
for us once in a while, usually lamb, but the contaminants just seem too
risky to me. Meat inspection in our country is a joke.

Today I slivered some pork tenderloin into julienned-type strips,
sauteed quickly in some sesame oil, added a bag of frozen stir-fry
vegetables and a few tablespoons of a ginger wasabi finishing sauce and
served it over re-heated brown rice. Time spent in the kitchen? Maybe
10 minutes total, where 5 minutes at most was prep time.

That sounds pretty good.... I'll have to try it. I still love beef... I
make sure that it is cooked thoroughly when it is ground.

I use my Cuisinart to grind beef for DH - I don't touch the stuff except for
my annual tenderloin steak when I get a real serious craving.

Frozen stir-fry veggies are an excellent time saver. I use those or
sometimes the canned ones (packed in water, not brine). The cleaned and
peeled shrimp make a good addition sauteed in a little garlic, ginger, and
red pepper.

This sounds good, but what are ranch beans? Are these like baked
beans?

Hmmm that is just the brand name... I need to buy more and will look up the
type after I do so. BTW, I just noticed that my calorie count doesn't
include the FF cheese... so add 30 calories!

You call that easy grin? No meal I make takes over 6 minutes or
has over 4 ingrediants. Nor is there any mess to clean up. Here's
easy: mix 1/2 pound of blueberries, 1 cup lite yogurt, and 2
tablespoons of peanut butter - then add cinamon. 400 calories,
excellent nutrition. I eat that twice a day. My 50 cent dinners: 1/2
cup oatmeal + 3 tablespoons of almond butter + sweetener + cinamon. I
also eat that 2x a day. My $1.50 midday meal - 3 fiber ryes + 1
tablespoon olive oil + 3.75 oz herring (canned kippered snack).
Finally, my $3.50 lunch out: (eat 3 fiber ryes + 1 tablespoon olive
oil ahead of time) - at restaurant have 16 oz Guinness bear. I never
eat red meat. Fish is clearly better. Each meal has 400 calories - I
eat 6 daily. I also burn 800 calories daily exercising. I average 50
grams of fiber daily.

Hi,

That's 400 calories for six meals or 2400 calories. It's a net of 1600
calories after deducting the exercise. fiber - well, let's just
say I'm very productive in certain areas! calories - oddly enough
when I'm unable to exercise I still eat 2000 calories - and I start
gaining weight. If I try to cut back I wake up hungry in the middle
of the night. six meals daily - my wife says "feed the baby"
because I eat so often.
