REC: Keto Pasta Salad
This recipe worked great and satisfied the pasta craving --- it's
even better after refrigeration and you can make a big enough batch to eat for a couple days: 1 Box of Keto Elbows (my store only has 8 oz. box) 1/2 Red Onion 1 Bell Pepper Cheddar Cheese cut into cubes 2 Chicken Breasts Rosemary Salt and Pepper to taste Mayonaisse Olive oil Boil the Keto Elbows according to direction on box. While elbows are boiling, sautee the chicken breasts with olive oil and rosemary. Chop onion and bell pepper and cheddar cheese. When elbows are done, rinse in strainer with cold water. When chicken is done, cut into small chunks or strips. Put all ingredients in a large bowl and mix with mayonaisse to the consistency you prefer, adding salt and pepper and any other spices you like according to your tastes. Serve immediately or refrigerate. *For added crunch, chop cauliflower or broccoli into small bits and mix it in* Andrea |
