RECIPIE: LC Delicious Chcken
Last evening on the way home from work I was inspired to try something new.
I'm getting tird of grilling meats and was looking for something with lots of flavor. Feel free to change it to suit your tastes. Ingredients: 4 boneless chicken breasts 3 vine ripened tomatoes, chopped few cloves of garlic, chopped 1 medium onion, sliced and separated into rings 1/4 cup olive oil 1 teaspoon (or more) capers salt & pepper to taste First, I used a chef's knife to split the chicken in half - horizontally, to make thinner pieces. Then, add oil to fry pan, heat on medium high. Add onion and cook for a few minutes, to allow them to wilt. Add chicken, allow to cook for a few minutes, turning to cook both sides. Then add garlic, add tomatoes, salt and pepper. Taste it to ensure you've added enough spices. Add capers. Serve immediately, with pan juices. You can substitute fish fillets for the chicken. I served it with brocolli rabe. It was delicious and low carb. Sandy K. |

That sounds wonderful. Last weekend I had 5 nice sized chicken breasts i
needed to do something with. Hub kpet going on about chicken enchiladas abut I wasn't in the mood to mess with that.. so I put them in a big skillet to cook, when they were almost done I took them out and sliced them up then dumped in a can of diced rotel tomatoes and let it cook awhile.. then added a teeny bit of corn starch (use something else if corn starch gives you problems.. it doesn't bother me) let it cook down and thicken up. Put half of it into a small casserole dish and spread a handful of shredded cheese on top, added the rest of the chicken and then more cheese. Cheese melted into it nicely and we spooned it out into low carb tortillas.. everyone loved it and it took maybe 15 minutes at most. Teeb "Sandy K." wrote in message ...
