Dear Carol,

Sounds wonderful!

I buy the huge jars of marinated artichoke hearts from Costco. Would
you happen to have an idea of how many actual ounces of artichokes
would be in one of those small jars, or what the jar lists as weight?

Default Food Processor- any recommendations?

Each do specific jobs for me, and I use them just about every day. Much
easier to to mix in the Kitchen Aid, chop etc., in the Cuisinart, and
blend with Bamix. Much easier to clean up the Cuisinart than messing
with the attachments to the Kitchen Aid and then cleaning them up. YMMV

Sorry, I have no idea. The last time I made this, I was using a huge jar
from Sam's Club. I just guestimated. If you're feeling ambitious, you
could go to a grocery store and see how many ounces are in a regular jar.
I don't think that exact measurements are critical to the outcome of this
recipe.

I have a Kitchen Aid - I guess I find more reasons NOT to use it. :-)
But it has the citrus juice attachment, which is great for doing big batches
of lemons or limes (on sale) and I freeze the juice in cubes.
Mostly though, it's for Chopped Liver! And even that's only a few times a
year.

I also use it to make pie crusts for our non-LC family and guests. It
makes perfect crusts in about a minute.


Over mixes, imho, making a "tough" crust. I use a handy pastry blender
(a hand utensil) or my fingers.

The salmon mousse I am hoping to make this weekend will probably be
made with the food processor as well.


Hmmm...never made it, so not sure what the directions are. My stick
blender would probably do the trick, though.

Using a knife and cutting board to chop the amount of nuts in those
huge Costco nut bags would be time inefficient for me, thanks.

I used to use the hand pastry blender, and it does work well. I find
it much quicker to use the food processor. Yes, you are correct about
over mixing. It requires very little time to mix everything just
right i the machine.

I love the stick blender. We use it to make just a little bit of
whipped cream as a topping or a quick snack. It is so convenient!

Sometimes the food processor sits on the shelf for months, and other
times it gets used several times within a few days. If I make cole
slaw, it helps to quickly get the cabbage cut just the way I like it.
I'm glad I have the food processor. Now I just have to hope it hangs
in there for a little while longer before I have to replace it.

Still have my Cuisinart DLC-8. I think I've had it since the late 80's
at least, though I don't remember just exactly when I bought it.

Going strong so far. In fact, I'll be slicing cucumbers with it
shortly.

Rarely use it.

hehe. I bought a Cuisinart and never used it. Ended up giving it
to someone on another newsgroup. I have never missed it.
