Default Grain recipes

I love bulgur and pearled barley, I'm not crazy about rice, but am willing
to try.

Problem is, I have a few recipes, that I love, but I'd like more.


What's your favorite grains recipe?

Well, the thing with rice is, there are hundreds of kinds. I love brown
basmati rice and I make it in a rice cooker. I also use the rice cooker
for pearled barley. I've never been a big fan of white rice (or wonder
bread for that matter!) so the whole whole grains thing is easy for me :-)

It sounds like you were referring to grains for dinner. If you are
referring to whole grains in general, don't forget oatmeal and popcorn.

What I'm researching right now is new way to prepare pearled barley as a
side dish... I have a spiced pilaf recipe that is extreemely yummy... but..

I know there's millions of possibilities, but.. just looking for favorites

If you have a Trader Joe's nearby, the frozen box of brown rice is a
great meal addition!

Microwaved in three minutes, cooled in about the same.

Two cups per package. Organic and all...

I take it you don't want to convert your barley into beer, right?
Sigh.

Since barley comes in dried grains, it can be steam cooked similar
to rice. Then it can go into a similar pattern of recipes. There are
far more ways to use barly than in soup and stew.

Since barley comes in dried grains, it can be steam cooked similar
to rice. Then it can go into a similar pattern of recipes. There are
far more ways to use barly than in soup and stew.


That's what I'm looking for actually.. can you steam pealed barley? I know
how to make a pilaf... boil it n stuff... I soak bulgur and use it cold in
salads n stuff and I love that. a little goes a long way and it's very
filling...

My husband is right now in the middle of heart related testing...
cholesterol is too high, heart rythm seems unregular.. I'm very scared.. I'm
trying to come up with more healthy recipes that he would like... I'm way
too young to be a widow.. ( I'm probably freaking out for nothing, but I
just want to enroll him in my "eating healthy lifestyle" but he's resisting.
I'm no good at nagging, so I'm trying to come up with yummy foods...

How neurotic is that? *sigh*

Sesame noodles and spicy soba -- RecipeSource.com

Buckwheat isn't really wheat but.... Coat 1 cup kasha (I use coarse
granulation) in 1 beaten egg and toast in a frying pan. Saute onion,
garlic, mushroom in the pan, add the kasha back, pour in 2 cups broth and
add baby peas and grated carrot and at least 1 teaspoon black pepper. Cover
and cook on medium about 20 minutes then fluff.

Cook long grain brown rice and let sit overnight. Stir fry with your
favorite veggies, then coat with an egg beaten up with a tablespoon soy
sauce and 1/4 tsp white pepper. Toss vigorously and cook until egg gets a
bit crispy. Eggs foo yung.

Same cold cooked brown rice, slice in garlic, add baby peas and 1 tablespoon
soy sauce per serving. Heat on one side of the pan. Scramble an egg and
cook on the side of the pan, then cut up with the edge of a spatula and mix
with the rice/veg. Fried rice.

Same cold cooked rice, leftover beef Pulgoki, spinach, carrots, bean
sprouts, kimchi, heat it all up. Top with a spoonful of chili-garlic sauce
and a fried egg. Bibam bap.

Cold cooked spaghetti, preferably whole wheat. Saute onions, garlic, red
bell pepper, mushroom, and heat up the spaghetti. Beat up an egg with a
little milk and toss in. Add some baby peas and cook until the egg is done.
Sprinkle with shredded parmesan cheese. Frittatta

1 cup pearl barley, 2 lbs brisket, 1 to 1/2 lbs beans, 1 to 1/2 quart water,
1 large chopped yellow onion, 6-8 cloves garlic chopped, 1 tbsp black
pepper, 2 tbsp paprika. Throw it all in the crockpot and away you go. This
recipe is centuries old; some innovators add potatoes or ketchup but I
don't.

2 tbsp each pearled barley, mung beans (not sprouted), cracked wheat, brown
rice, wild rice or black emperor rice, whole wheat (not bulgur) or rye or
urad dal, 1 cup shredded spinach, 1 carrot cut up, 1 stalk celery cut up, 1
medium tomato cut up, 1/4 tsp turmeric, 1/4 tsp or less cayenne, 1 tblsp
ground coriander seed, 1 tsp ground cumin, 1 tbsp chopped cilantro
(coriander leaf) and I think that's it. Cook the grains, then add the
veggies and a couple pats of butter or margarine and stew.

Barley can be steamed much like rice but I'm not sure of the
ratios of grain to water needed. I've put barley pearls into a
strainer, put the strainer over water, covered and boiled. It
works fine but didn't teach me the ratios that would apply in
a steamer.

Being a low carber my idea of lots of barley is a tablespoon
of dried grains. ;^) For me its for use monthly not daily and
as a minor ingredient not a course in the meal.

If you're willing to experient a bit you should be able to work
out the ratios needed to make it work in a ricecooker. I bet
it takes more water and less grain than rice does but how
much so I have no idea.
