Cumin Roasted Potatoes (Jera Aloo)
Another good side dish. My husband loves potatoes... so there!
Will~ Cumin Roasted Potatoes (Jera Aloo) 4 servings, 3 pts/serving Ingredients: 1 ½ lbs potatoes (Yukon Gold or Russet), unpeeled and cut in ¾ inch chunks or wedges 1 TBSP canola or sunflower oil 2 tsp cumin seeds ½ cup water or broth Salt to taste Cilantro (optional) Directions: Heat the oil in a cast-iron frying pan over medium-high heat. Add the cumin seeds and sauté until they turn several shade darker, about 1 minute. Add potatoes and salt. Allow potatoes to brown well on one side before turning, about 3-4 minutes (Resist the temptation to move them around constantly). Repeat on all sides until evenly browned. Add water, cover and reduce heat to medium-low. Simmer for about 5-7 minutes, or until potatoes are almost tender. Uncover and cook for 3-5 minutes more, until potatoes are tender and glazed. Adjust salt and garnish with cilantro. Serve immediately. |
