Don't be surprised if your tastes change over time. After low carbing for
awhile I tried brussel sprouts, a veggie I've detested for at least 40
years. They've become one of my favorites!

And don't underestimate how good some vegetables can taste with just plain
butter or butter and some seasoning on them.
I love low carb! lol

I've found that after several weeks of low-carbing, vegetables started to
taste better. Since I was no longer eating the overly processed, sugary
stuff, I could actual start to taste the sweetness in vegetables.
Moderately carby ones like bellpeppers taste like candy now.

How to prepare them really depends on which vegetables and what you like.
I'm a big fan of cheese and butter, myself.
