Default Hi-fat/protein, Lo-carb recipe

1 four-oz can Sardines (oil-packed)
10 Black Olives
1 fresh Garlic Clove
2 Tbs fresh chopped Parsley
1 Tbs Apple Cider Vinegar
1 Tbs Virgin Olive Oil

Put all ingredients into food processor till combined. Use with celery
sticks.

2.5 gm Carbs
22 gm Protein
36.5 gm Fat

It's very tasty, but wouldn't advise eating this if planning to
socialize....that fresh garlic wreaks havoc on the breath....even worse
than ketosis. LOL

Assessing this carefully, it comes out with quite different values.

10 medium sized black olives = 2.4 grams Carb less 1.2 grams of fibre.

1 fresh Garlic Clove

One average clove = 0.99 Grams of carb

2 Tbs fresh chopped Parsley

30 grams chopped parsley (2 Level tbs), 1.9 carbs less 1 gram fibre.

1 Tbs Apple Cider Vinegar

5.5 carbs. Apple Cider vinegar is sweet and carb loaded, nearly as bad
as sushi vinegar. Even ordinary malt vinegar has a gram of carb per
tablespoon.

1 Tbs Virgin Olive Oil

I make it to be 8.9 net carbs, not 2.5. Quite a big difference. Add to
that .75 net carbs for each stick of celery and you are looking at
something that is not particularly low carb at all.

Regards

David

Sorry, David, but my count is different from yours. The parsley I use
has only .1 gm Carbs per Tbs. The cider vinegar has .9 gm Carb per Tbs.
The ten black olives I used had 1.4 gm Carbs. The celery wasn't part of
the recipe. It was a suggestion.
My recipe is low carb for me...but you're cool, just don't use it for
yourself.

Are you sure you aren't thinking of balsamic vinegar? The USDA website lists
cider vinegar at 0.89 g carbs per Tbsp.
