I was puzzled because I am able to have old-fashioned oatmeal for breakfast without any problem, and my BG readings have been very good since I started on this diet. As a result, I have now also eliminated products made with whole wheat flour (in fact, any flour at all). I am doing very well on this regimen, but I was left wondering *why* I had that reaction. Is corn the worst carb of all? To be avoided?
Ive been slowly learning abt low carb diets. Im not
exactly doing the Atkins diet tho. Just eating less carbs. One thing Ive given up is the 3 a day Mt Dew habit I had. Having said all that Im slowly learning that modern day car has been "hybridized" to be sweet and FULL of carbs. True? If yes.... could one go os far as to say that corn in all form should be avoided as much as possible? Bottom line.... a potato altho full of carbs may at least have some other nutritional value to it? Whereas eating a can or corn does nothing but give you TONS of carbs? Im trying to make a decision if corn is one item I should quit eating all together... in ALL forms.... just as I gave up soda Again...Im not really doing the Atkins diet....I still eat fresh peaches, bananas, etc. Im just trying to determine if corn is the WORST of all carb sources. |

Most of the rest is water, although 3% is protein and 1% is fats (half polyunsaturated, 1/3 mono, 1/6 sat). Of the carbs, only 16% are sugars, which is where the fructose kicks in. 14% of the carbs are fiber, the rest are (presumably) starch, which is normally made from glucose (the "good" carb - it repletes muscles first, whereas fructose repletes the liver first). Processed corn is different - not only do they use different varieties of corn, but they fiddle with the contents during processing. The WORST no. White sugar, white flour are probably the worst and most
pervasive in the diet. Corn actually has more of certain mineral and vitamin than potato(with skin) does(100gms vs 100gms). COrn also has Lutein an antioxidant. Check out http://www.nal.usda.gov/fnic/foodcomp/search/index.html'' Neither potato nor corn comes out as a big nutritional wallop. I only had corn when I grew it myself this year. Ate about a dozen cobs which was well worth the carbs. I also had it in one recipe. I think if you keep widening the range of what you are willing to try and ate missing out on certain items hits less. I love cron but I'm not missing it terribly and if I want it I have it. Even this weekend I had bread. I went to a fresh bakery and bought pumpernickel rolls, some raisin cinnamon and irish soda. A big splurge for a low carber over the past few days, but all of it a special treat. If you are going to indulge in a carb, make it really good and worth it. I figre why buy a loaf of prepackaged pumpernickel from the supermarket when I can get fresh wamr rolls from a bakery and spend the same carbs on the best breads. wrote: Ive been slowly learning abt low carb diets. I only had corn when I grew it myself this year. Ate about a dozen
cobs which was well worth the carbs. OK I thought say corn on the cob was nothing BUT carbs and had no real nutritional value at all. Apparently it does have 'some" nutritional value other than carbs |
