WW Chicken Marsala
This is from the Stir it Up book and the entire family loves it. I had
to fix mine early because I had a kniting class so I eyeballed one fourth of the portions. Season 4 chiken breasts with salt and pepper. Put one teaspoon olive oil in a nonstick pan and saute the chicken on both sides till cooked thoroughly. Remove to a plate. Add 2 cups of sliced fresh mushrooms and 2 teaspoons of flour. I skipped the flour for my single serving. Stir to blend. Add 1/4 cup Marsala and 1/4 cup reduced sodium chicken brothe and cook until the sauce thickens. Divide equally and spoon over the chicken. We had this with fresh summer squash, salads and tea. I think my daughter made rice for the rest of the family. My daughter bought me two WW cookbooks for my birthday, 30 minute meals and the complete WW cookbook. I gave away all of my very old WW cookbooks but love these new ones. Audrey |
