Quick Spicy Salad - Recipe
Just had this for lunch. Very tasty.
Chop up some romaine lettuce, chop up a small to medium tomato and put that on top. Take a couple ounces of jalapeno cheddar cheese and melt in microwave, stir in a dash of cream to make it pourable. Drizzle over your veggies. |

Pouring hot melted cheese over perfectly nice, cool, crispy salad greens just doesn't do it for me. I'd rather just throw some small chunks of pepper jack on top, or something. Or, I make spiced almonds (sometimes VERY spiced). They add a nice crunch and some fire. OR, instead of the chopped up small tomato, I'll use a medium or hot salsa as the dressing. Now, I could see pouring your spicy cheese sauce over a pile of steamed brocolli, cauliflower or zucchini...that would be tasty. Lee |

There wasn't enough of the cheese to wilt the lettuce, Romaine is very firm
