Default Tired of Turkey - Birds and Bees.

I'm getting sick of thanksgiving turkey. Guess I'll try making the
last into a turkey salad. Any suggestion.

I've been giggling all day because I heard Adam Sandler on Jay Leno
say when asked if his dad talked to him about the Birds and the Bees:
"Not really, he just told me to hide in the closet and watch what he
was going to do to my mother..."

Well, that's what most guys do one way or another.

Here's my favorite recipe:

Nancy's Fowl Salad for Two

1 1/2 cups cubed fowl, chicken or turkey
1/4 cup mayo (you can add a bit more if you like more dressing)
1/2 pkt Splenda
1 tsp vinegar
1/2 cups walnuts (chopped)
3 ribs celery
a dozen grapes or 1/2 an apple if you can do fruit, NOT for induction!

Mix everything together, chill and enjoy with a dab of sugar free cranberry
sauce

Nancy's Cranberry Sauce

1 bag cranberries (washed and picked over, discard any bad berries or stems)
1 cup Splenda or other replacement that can take the heat
3/4 cup Hoods Orange "juice" or use 3/4 cup water & orange extract
1 tsp vanilla
1 tsp xanthan gum

Boil together for about 20 minutes over a slow boil in a 2 qt saucepan, the
berries burst and have enough pectin to help firm it up but I like a bit
more substance with xanthan gum. I keep this in the fridge for a couple of
weeks.

Haven't had any turkey yet. I just bought one for myself, was on sale at
Whole Foods and couldn't pass it up. I didn't do Thanksgiving this year, so
am looking forward to some smoked turkey.

I am sure I will get sick of it as well due to I will be eating the whole
thing by myself.

Enjoy,
Curt
