Christmas goodies cooking...
How are you all managing with the Christmas preparations? I usually do
a large pile of Christmas goodies for friends and family. I didn't do too much last year, but this year is going well. 3 Golden Christmas cakes bakes and marzipanned - will get iced today. One for us, one for the church Christingle tea, and one for my son's school, for the teachers. 6 chocolate Christmas cakes bakes - and them my son found three from last year in the cupboard, so the all got marzipanned and chocolated last night! There I was, slapping melted Belgian chocolate on all these cakes, and I only snorfled up about a point's worth that dripped on me and the lazy susan! 2 chocolate stollen made. My own invention... Wonder how it will turn out? Smells yummy... We also made 2 dozen mini mince pies yesterday, for my son's cub mince pie competition (we didn't win, but we didn't care! We still think my home made mincemeat is the best in the world!). They work out at about a point each because they are tiny! Pampered chef mini muffin tin sized. I have some more stollen to make, and a Black Bun or two, and some shortbread. Cranberry sauce is all done (I usually do it in January when the cranberries drop in price!), and I have piles of well matured mincemeat from previous years. I made about 30 lbs of it a couple of years back. It's funny, but in past years I'd have dug in an eaten vast quantities of this stuff, as well as inflicting it on every member of the family, any visitors, and whoever I could trap! Now I'm happy to give most of it away, and only have a little nibble myself. There's a golden lining to having had the gall bladder disease! The difficult one will be coating chunks of ginger in the chocolate... I just adore chocolate ginger! Maybe it will help if I put the chocolated chunks in little gold petite fores cases and present it in posh boxes. It will look more like presents, be all sealed up, and a lot less accessible to my gnashy teefs! 9 of the cakes are already wrapped (yes, even the one we shall keep - then I'm not tempted to bite lumps out of it as it stands!), and the last 3 will go in boxes later today when their icing is on and dry. All my good intentions may well be snookered this evening, however... I'm trying to save points for a birthday meal out. Three ladies of uncertain ages go out to celebrate our birthdays (two December and one early January) every year at this time, as we are off for a girlie night out at a Chinese place tonight. Ho hum! But they get it about 1/2 to 2/3 of an inch thick! I put Christmas Cake Frills round the edge.
