Why do you have to pull your pork? Isn't cooking it more normal?

All kidding aside....pulle pork is a style of BBQ that is my very, very
favorite. It's popular in the Carolinas. Like all BBQ, it requires
hours of low-temp cooking time. The pork roast is BBQd oh so slowly and
marinated in a vinegar-based marinade.

The sauce is light and tangy. Much better than that gloppy sweet stuff.

It's called pulled pork because once it's cooked for hours (usuall7 at
least 8 hours of slow cooking) the pork is so tender it pulls away and
is chopped and placed on buns with extra vinegar sauce. It's amazingly
good!

Oh I see! Thanks! Sounds interesting. We don't get BBQ in that sense
here.
