atkins' coleslaw recipe
I wanted to make the coleslaw in the Atkins cookbook but was stunned
at the carb count. The recipe serves 6. The ingrediants are Dijon Mustard, mayo (1/4 c. each), 1/2 packet sugar substitue, 1tbs lemon juice, salt, and 3 cups shredded cabbage. They give the total grams for the entire recipe to be 41.4 carbs!! Doesn't that seem like a lot? seems like the only carby thing is the cabbage and in the back of the book in his carb counter section it shows shredded cabbabe as being like 4.9 carbs for 1 cup. If that's the case wouldn't the recipe really only have apprx. 14.7 carbs plus (to be really safe) a trace for mustard, lemon juice, and mayo???? Thanks! |

I am getting 1.880 per 1/2 cup with fiber at 0.805 making it roughly 1 carb

That's more like what I was guessing. It doesn't appear that he does the fiber subtraction in this cookbook at least. He just gives totals. His 1/2 cup carb count is 6.9! Even if he didn't subtract fiber it still seems high. Oh well. I'm thinking this cookbook is inaccuarate or has typos or something? It's loaded with typos, some high, some low. As I recall the Atkins fudge recipe is low for the total recipe count by almost 30 grams. (the pudding mix in the ingredients has more carbs than the recipe total). I do recall that his coleslaw recipe went in the trash after one bite. Sweetened mustard dressing on it was NASTY.
