Default non-dairy low-carb recipes and non-meat low-carb recipes

Hi,

I find that many low-carb cookbooks I have glanced through seem to have many
recipes containing meat and cheese together. Anyone know of any way to
substitute in these recipes (for the dairy part or meat part) or find recipes
which are basically non-dairy...

On the flip side, coming up for me is what is commonly referred to as "the 9
days" where there is no meat eating. Any ideas about low-carb non-meat recipes
too? Sounds like fish and eggs, but my wife is sick of omlettes and there is
only so much you can do with tuna (or maybe there is more...).

You might get some ideas from Cyndi's vegetarian webpage.

used to hang out here. I don't remember her name but her page might
be in the ASDLC FAQ

Guess it is too bad Myra never published her cookbook.

There are lots of substitutes you can use as "meat" (e.g. Morningstar
Farms Grillers crumbles:

can be used instead of ground beef). I'm not conversant with kosher
dietary restrictions so I can't help you there. Sick of plain eggs for
breakfast? Try eggs Italian style (eggs baked with marinara sauce).
Eggplant is also very versatile. Stir frys can be made with extra firm
tofu cubes instead of meat (tofu soaks up flavors very well).

You can make oven baked veggies (e.g. yellow and green squash, peppers,
portabella mushrooms, eggplant, etc.) by chopping them, tossing in olive
oil and Italian seasoning, bake at 350 to taste (15 - 25 minutes). May
you do veggies and cheese together? If so, that's a good dinner.
Spinach with feta - mock spinach pie. You can make a meal out of a big
bowl of raw baby spinach, cheese and LC dressing.

hello Ben !

I am a vegetarian low carber. (I eat dairy but no fish) Many times
what I have done in recipes that use ground beef is substitute
morningstar veggie crumbles. They work nicely as a substitute and I
have had no problems with that. You could also use a veggie burger for
burgers, etc.

I am a big dairy fan but some recipes/meals that you could could leave
out dairy on are (but some use meat substitutes)
George Stella's chili recipe on foodtv.com
fried rice using grated cauliflower
spanish rice using same
taco salad (can use veggie meat or soy beans in it) with salsa, slices
of avacado, olives, peppers
Indian curry recipe
chinese style stir fry with tofu
various salads or vegetable dishes with a side of protein (such as
veggie burger)

They appear to be kosher. I enlarged the image of the product and saw what
looked like a certification and a quick google confirmed it. So this is a real
help I must say! I still need to look into recipes (and how much these
morningstar things cost - probably not more than kosher meat I imagine) and I
will be really cooking...
