Default Lovin the Low Carb 1-2-3 recipes!!

Last night I made 2 of the recipes from the book for dinner. I would do each
again but not neccessarily together.

I made the Cod wrapped in Grape Leaves and also a baked caulifower with
white cheddar. The cauliflower was awesome, I will make that with burgers
next time. The fish was good, I should have just made a greek salad on the
side.

It was a lot of cooking though, with 2 young children I can't always spend a
full hour on dinner. I need quicker prep time. This was a solid hour at the
counter and stove prepping and cooking.

With the extra grape leaves I will make a snack from the book where you wrap
feta cheese in grape leaves than fry a bit in a pan so the leaves get
crispy and the cheese gets a little melted. Sounds awesome.

I must sound like a commercial for the book - I think it was Roger who
posted about it and I had to check it out! So thanks roger.

Anyone else trying the recipes from this book? Anyone recommend a LC
cookbook that they love? I saw many in the bookstore but prefer a
recommendation. (and yes, I alread know that if I google "cookbook" or look
on Amazon I will find many. I also know that I can google for recipes.

I agree. I don't want to spend lots of time in the kitchen and don't want a
lot of "exotic" foods, but I do want some variety. Dana Carpenter's books
are excellent.

white fish is really good with italian dressing on it too! Bake salmon
with a few green onion stems and a couple slices of bacon and some
kosher salt sprinkled inside!. YUMMY

I just did the sundried tomato meatloaf and it was pretty good.

In reading the recipes, it appears as if there is a lingering hint of
"Low Fat" belief. In a number of places, "Low Fat" versions of
ingredients are spelled out for use.

There may be a reason for this, but then too the "Low Fat" message has
been drummed into the heads of Americans for a generation....

Not brainwashing....

Maybe brain numbing...... "Low Fat"

Yes...you'll notice that one author is a nutritionist or something (don't
have the book in front of me now), so I think that's the origin of the LF
slant. There is also a hint of limiting sat fat intake as well. However,
what I like about it is that it provides carb and calorie limits, too, so
the serving sizes are useful to those who count calories was well as carbs.
In that light, limiting fat helps...
