Default Chicken recipes that are WW friendly AND kid friendly

Is there such a thing?

I must confess, the only time I've enjoyed chicken is when others cook
it for me - I always seem to mess it up - but there have got to be some
good recipes that won't cost a million pionts OR make me gag?

Anyone have ideas?

Simple lemony chicken breasts:

Take a medium sized skinless boneless chicken breast per person and
place them in an oven proof dish. Squeeze one lemon for every 4 breasts
Mix with it a teaspoon of honey per lemon. Double the liquid with
water. Pour over the breasts, sprinkle with a pinch of herbs. Cover
and bake for 30 minutes at 180 C. Works out at about 3 points per
chicken breast.

Serve with new potatoes, fresh veg, and with the pan juices poured over.

I do this about once a week. You can vary it by using spices rather
than herbs, and an orange version is good made with pork streaks. I
also do much the same with salmon (just leave out the water).

Chicken breasts, a package of taco seasoning mix and a cup or so of
salsa.

Place in crock pot and let cook all day.

Serve with some of these:

tomatoes
baked potato
tortilla
nacho chips
sour cream
more salsa
cheese

I made this dish last night, served the chicken to my boys cut it into cubes
with ketchup and told them they were chicken nuggets. They both asked for
more. :-)

Crock Pot Salsa Chicken

4 halves boneless/skinless chicken breasts
1 package reduced sodium taco seasoning mix
1 cup salsa
2T cornstarch
¼ cup light sour cream

Spray crock pot with Pam. Add chicken. Sprinkle taco seasoning, top with
salsa. Cook on low for 6 - 8 hours. When ready, remove chicken. Place 2T
cornstarch into small amount of water and stir well. Stir mixture into
salsa sauce and add ¼ cup sour cream.

4 servings

4 points each

Ha!

I have a stash of recipes on an old machine...I'll see what I can find there
in the next few days and post them here. Also, check out the WW Recipe
Exchange over at Yahoo Groups at

If you join the group (go for the digest method), you can search the
archives for recipes. You can find just about anything you want over there!

I marinate four chicken breasts in one cup of citrus juice, lemon, lime
and orange. Then I bake the breasts for 20 minutes at 350 seasoning
with tarragon, salt and pepper. My favorite way to cook chicken for
salad is to poach it. Put the breasts in a glass dish and fill with one
inch of boiling water. Cover with buttered wax paper and cook 20
minutes at 350 degrees. It makes them moist and tender. These recipes
are for the skinless, boneless breasts.

While this isn't a precise recipe, this works for our kid and the kid in
us....

Chicken--Nugget Style

Chop chicken breast into nugget size pieces. Place in a bag with 1/3 cup
flour and season salt. Shake until coated.

Heat pan sprayed with lots of Cooking Spray to medium-high. Place nuggets in
pan and cook until done.

For dipping sauce, try ketchup, lite ranch or other favorite sauce.

A good side would be potato wedges as follows-

Take a large baking potato and cut into thin strip slices. Sprinkle with
season salt and bake for 45 minutes.

Voila!
