Cooking Light Gazpacho !
Chunky Tomato-Fruit Gazpacho
7 servings, 1pts/serving Ingredients 2 Cups finely chopped tomatoes (about 3/4/pound) 2 Cups finely diced honey dew melon 2 Cups finely diced cantaloupe 1 Cup finely diced mango (1 medium) 1 Cup finely diced, seeded and peeled cucumber (1 medium) 1 Cup finely diced nectarines (3 medium) 1 Cup fresh orange juice (4 oranges) ½ cup finely chopped Vidalia or other sweet onion ¼ Cup chopped fresh basil 3 TBSP chopped fresh mint 3 TBSP fresh lemon juice 1 tsp sugar ½ tsp salt 1 Jalapeno pepper, seeded (or not*), finely chopped Directions 1- Combine all ingredients in a large bowl. 2- Cover and chill for at least 2 hours. 7 servings, Cal. 95, Fat 0.5g, Fib. 2.8g If you like it real spicy don't seed the jalapeno |
