Default HELP: Looking for low carb pasta recommendations for Macaroni and Cheese

Hello all,

I know that taste is a matter of choice but I am interested in having
macaroni and cheese with my Thanksgiving dinner and was wondering if anyone
has recommendations for pleasant tasting low carb pasta?

Have you tried cauliflower and cheese? The consistency is about the
same, and the cheese part should be easy ;-)

Have you tried Dreamfields pastas? They taste the same as regular pasta
(no soy ingredients) and I haven't heard of anyone who is non-diabetic
having any problems carb-wise with them. And I've only heard of a few
diabetics that have problems with them, so even then they seem to work as
advertised for most people. I'm not diabetic and eat them at least once a
week, sometimes more often than that, and don't have any high-carb
reactions to them.

As strange as this name is, Ronco Reduced Carb Spaghetti is pretty good.
It's 31 g of carbs but has 12 g of fiber for each 2 oz. serving.
