low carb pizza - need help with ingredients
Hi!
Was wondering if anyone could help... About a year ago I was able to make a cheese & pepperoni pizza with a whole wheat low carb tortilla for a net carb count of 4gr (4gr!) Can only find whole wheat tortillas with a net carb of 10gr or a low carb with a net carb of 8...anyone know of a lower carb tortilla? -- Ellyn M. |

Why not skip the crust, and mix and bake your cheeses, meats, and sauce in a

Have seen a recipe for a ground beef based crust that would be lower than 3. Might be googleable. |

Half of a Flatout Light Original wrap would be about 3.5 g net carbs. http://www.flatoutbread.com/products/lt_orig.html And if you live in a place where Joseph's pita bread and wraps are available (they're made in Massachusetts), then their low-carb pita or half of one of their low-carb Lavash wraps each has 4 g net carbs. |

You could also make a quick scrambled-egg pizza: Make scrambled eggs in a skillet the usual way. Meanwhile, pour some pasta sauce onto a flat microwave-safe plate and top with cheese & pepperoni; microwave for about a minute, and then slide it (carefully) onto the scrambled eggs. Or make a slower "thick crust" pizza with a baked-tofu base: Take a block of extra-firm tofu (12-16 oz), and cut it into four slices of equal thickness. Pat dry with paper towels. Drizzle both sides of each slice with olive oil and sprinkle with seasonings (I use onion powder, garlic powder, italian seasoning, and crushed red pepper flakes). Bake at 375 for 20 minutes, turn over and bake for 20 more minutes. Then top with pizza sauce, cheese, and whatever other toppings you want; put it back in the oven until it's all nice and melty. (We have to use forks to eat this rather than being able to pick it up with our hands.) I put shredded cheese on a plate, topped with pepperoni, cooked meat, jalapenos, salsa, whatever, and pop it in the microwave for about 3 minutes. If you time it right, the cheese will get a bit crunchy, so it's sort of pizza-like. I used a microwave.
This was from back when I was close to 300 pounds and portion control was not yet an issue. Placing an ordinary plate over the top of a bowl can keep the microwave oven from being spattered.
