REC: Banana bread
Note: This is not a recipe suitable for people on induction or who have a
super-low daily carb allotment, but it would fit in well for ongoing weight loss or maintenance. 1/2 cup Splenda 1 tablespoon liquid saccharin or other sweetener (equal to 1/2 cup sugar) 1/4 cup butter, softened 2 eggs 1.5 cups mashed bananas (about 3-4 medium) 1/2 cup water 1 cup whole wheat flour 1/3 cup soy flour 1/3 cup wheat gluten 1 tsp baking soda 1/2 tsp salt 1/4 tsp baking powder 1/2 cup chopped nuts (optional) Mix sweeteners, butter, eggs, banana, water. Add combined remaining ingredients. Bake at 350 in greased loaf pan for 30-40 minutes. 24 slices Per slice (not including nuts): 7g carbs, 1g fiber (6g net carbs), 3g protein, 63 calories. (Original recipe I adapted this from had 120 calories and 18g carbs per slice). Just made this and was pretty happy with the results.
