Default Spaghetti Squash & Tuna Salad

I was getting hungry and planning to have some leftover spaghetti squash with
something when I got home. I wasn't sure how I wanted to prepare it, though. I
was thinking maybe butter & garlic and parmesan or something along those lines.
When I opened the fridge to pull it out, though, I realized I still had some tuna
mix leftover (tuna, green onions, celery, dill pickle, swiss cheese & mayo). I
decided to take a chance and try them together. At the last second, I decided I
didn't NEED to cook it because spaghetti squash isn't greasy, it doesn't clump
together like leftover pasta would, and it's actually sort of crunchy in a bean-
sprout sort of way, so I just mixed it all up and ate that for lunch. It was
REALLY good! It never occurred to me to have the spaghetti squash COLD -- this
has SOOOO many possibilities for the upcoming summer!

I'm finding this is a favorite-spaghetti squash, despite it can be a
little carb heavy in quantities. there are so many sauces to try it
with. The tuna mix sounds great and I will try it cold next time. I
always like pasta salads. I was thinking tuna with some sundried
tomatoes or (i know this may sound weird) chunks of apple. Last night
I used a Thai Sesame Peanut sauce with scallions in it. This would be
similar to Cold Sesame Noodles offered in many chinese restaurants. It
was good with the sauce still warm. I make a carbonara sauce which
tastes wonderful with it. I haven't tried basic marinara on it.

I'm all set for growing Spaghetti Squash in the garden this year. I'm
starting seedlings this week.
