Anyone out there eatting sunflower seeds for a low carb snack? I just wondered?
I love them but dont eat too many at a tiime. Find i eat less of them then
nuts. Also i have been working out with a personal trainer who says no fruit. I
am not following induction now and know im allowed limited berries but not much
else. He says if you are doing low carb no that the sugar from fruit is the
worst for you. Anyone else experience this. Strawberry season here in upstate
NY is in and damn i love em. Hate to pass up the season but i dont want to hurt
what ive worked so hard to acheive. Any input appreciated. Happy Fathers Day to
all the dads!!

Karen,
I also on occasion eat sunflower seeds in small amounts.
If you aren't doing induction, I see no reason why you can't
have a few strawberries now and again unless you feel you
need to follow your personal trainers advice. )
I am in northern NY and the Amish are selling them like
crazy here.

As an owner of a low carb store, I agree that you'll get all your nutrients
and fiber from veggies. Stay away from the fruit for now!

One of the purpose of Atkins (and I presume other low-carb plans) is to
start off low, lose some weight, and gradually reintroduce different foods
so that, by the time you reach your target weight, you are eating just about
everything you want, albeit sometimes in modest quantities. Are you
prepared to give up the joys of fresh strawberries forever? Probably not.

A few times a week a treat myself to about seven large strawberries and an
ounce of dry-roasted peanuts as a major "dessert" (I picked the number seven
as being roughly equivalent to 10 grams of carbs at most). I think the nuts
provide the good fat and protein to complement the sugar in the
strawberries. At any rate, it certainly hasn't hurt me.

Sunflower seeds would probably be about the same.

Life is for enjoying. Enjoy.

Berries are the first fruits Atkins allows in. Strawberries, blueberries,
raspberries and blackberries are all pretty low in carbs. Eat a few with
yogurt or heavy cream or put some in sugar free Jello.

I haven't read through the whole thread, so I hope this isn't
redundant. I have been making a terrific nut butter using sunflower
seeds. It's become a real favorite. I've also made almond butter.
Hazelnut butter is next, haven't had a chance to try it yet.

Here's what I have been doing so far, using a blender:

12 oz sunflower seeds (I use roasted, but not salted)
75 ml oil (grapeseed, canola or light olive oil will work)
2 tbsp Splenda
1 tsp kosher salt

I grind/chop the nuts for about 30 seconds, and then start blending in
the other stuff. Use the puree/liquify function to create the butter.
Then I use a Ball canning jar to store it. This mix will fill up a
pint jar.

I'm still playing with the recipe, but right now this is pretty good.
Takes 10 minutes to make.

Be careful with the yogurt though. Many kinds have a lot of carbs.

Only if they have sugar or fruit added already.
