Atkins: The Complete Cookbook
I made the Atkins chocolate macaroons last night. Not bad, it had a chew to
it, but I feel very guilty this morning. It took 24 splenda packets to make this and I usually only use 2 a day. I know coconut, egg whites, unsweetened cocoa are very low in carbs, but I can't handle having "low carb" sweets around. These were only net 2 carbs per small cookie- and I rationalized till I talked myself into 2 more. I keep thinking " these are low carb- not that bad, even though I've eaten my carb limit for the day. I grabbed 2 extra cookies last night. A high carb chocolate cake has been in the kitchen for a few days-I know not to mess with it, but these are teasers. Even 4 tiny cheesecakes were too much. This is definitely one of my triggers to downfall. Recipes are fair, some look good, but I can modify my own just as well.
