Need help figuring out points on recipe...
Hi everyone....could someone help me figure out the points on these muffins?
Thanks.........isabela ~~~~~~~~~~~~~~~Apple Raisin Muffins~~~~~~~~~~~~~~~~~~~~ Recipe By : Family Circle Serving Size : 12 Preparation Time :0:00 Categories : Low-Fat Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups All-purpose flour 1/2 cup Dark brown sugar -- packed 1 teaspoon Baking powder 1/2 teaspoon Baking soda 1/2 teaspoon Ground cinnamon 1/2 teaspoon Salt 3/4 cup Buttermilk 1/2 cup Unsweetened applesauce 2 Egg whites 2 tablespoons Canola oil 1 cup Peeled apples -- chopped 1/3 cup Raisins Preheat oven to 400 degrees; coat muffin tins with nonstick vegetable oil cooking spray. Combine the flour, sugar, baking powder, baking soda, cinnamon and salt in a large bowl. Make a well in the center. Stir together the buttermilk, applesauce, egg whites and canola oil in a small bowl. Pour into the well in the dry ingredients. Stir just until evenly moistened. Do not overmix. Gently fold in the apples and raisins. Divide the batter evenly among the muffin cups. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean. I ran this through my mastercook program, came up with 162calories/3g fat/1g fiber = 3.29 US points per muffin ... based on the recipe making 12 muffins. Joyce Thanks, Joyce for your help with this....i think i am going to try making them in the morning and try freezing them. isabel |
