WW watermelon salsa

Default WW watermelon salsa

2 cups diced watermelon
1/2 cup diced yellow bell pepper
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablesppon diced red onion

Combine the ingredients and chill before serving.

The recipe called for this to be served with 4 boneless skinless chicken
breasts that had been marinated in 2 teaspoons canola oil and 1 teaspoon
fresh lime juice. I marinated three with 2 freshly squeezed limes and
some tarragon. My son may have used a bit of oil when he grilled them.
The recipe was 4 points each for 4 servings that included the chicken.

I've had similar salsas with mango, pineapple and other fruit so when
watermelon is not available, you can experiment.
