Mashed potatoe substitute - Celery Root

Default Mashed potatoe substitute - Celery Root

I was watching a food show the other day and the chef was serving
celery root as a side dish. Got me thinking, so I tried making some
myself. It has about 7g net carbs per cooked cup. It mashes up
easily and I think it tastes very good. It is similar to mashed
potatoes, with a slight celery taste to it.

I prepared it just like regular mashed potatoes, boiling, draining,
mashing and adding a pat of butter, salt, and a splash of cream. For
those that like wasabi mashed potatoes, you can add some of that too
if you like. If you like them creamier, you can run them through the
blender, but the mashed consistency was fine with me.

It's not as low carb as the cauliflower version, but is an interesting
alternative.

Default Mashed potatoe substitute - Celery Root

Inventive use for celery root. I've used in salads julienned and roasted
with other winter root veggies. I think I'll give it a try.

Great tip. I've been using celery root IN mashed potatoes for a long
time(pre-atkins), but never thought about just using it by itself.
