I just finished reading a book called "What To Eat: And Aisle-by-Aisle Guide to Savvy Food Choices and Good Eating" by Marion Nestle. In the section on fish/mercury/PCBs she says that the safest tuna is canned chunk or light tuna that is not labeled "white"; in other words, the cheap stuff. Betsy Betsy, I can only offer up Bumble-Bee Low-Sodium solid white albacore, add some fine chopped celery, some Trader Joe's low-fat mayonaise, pepper to taste and apply onto (the then) Trader Joe's no-sodium whole wheat bread, toasted, with lettuce and that's fine dining. Serve open-faced to cut back on calories and other negative nutrients. Can you tell that I have no taste? Add some low-fat cheese if you like to live dangerously. Like The Historian and I do.
