Vegetables, vegetables and more vegetables! A steamed artichoke
dipped in melted butter, green beans roasted in oilve oil and garlic,

fried in butter, sugar-free pickles, fried bell peppers and onions, salads

all sorts, sugar-free cole slaw, raw sugar snap peas, etc.

And some low-sugar fruits are good also. Depends on your carb
allowance, of course. For me, I can tolerate a cup of berries or
melon, a kiwi, half a pomegranate or a small peach at lunch or dinner
- never alone (I want protein or fat along with, like mixing the
berries in yogurt or eating a kiwi as dessert after a dinner) and
never at breakfast.

Carbs are worst in the mornings cause of the effect on blood glucose
and insulin is worse then, so it's better to have most of your carbs
at lunch and dinner.

Protein and fat are good as part of every meal.

It's true for nondiabetics also. Blood glucose spikes higher after
breakfast. It's probably due to cortisol levels.

Yet, nondiabetics don't get spikes that damage organs, hence is not nearly
an issue as for diabetics.
