Fabulous.

It's a matter of tastes, but I rather like turkey sausage. I drizzle
a bit of oil on it if it comes out dry so I don't use it to reduce
fat. I like turkey burger and turkey sausage but not turkey dogs or
turkey ham. Go figure ;^)

It's also much less greasy. Compare normal Italian sausage with turkey
sausage, and you'll have a pan full of oil with the normal sausage. This
makes clean up a bit easier.
