blueberry muffins

Default blueberry muffins

Yesterday I made the Blueberry muffins from Low Carb & Loving it.
Oddly, they filled my 12-cup pan when they were supposed to only fill 6
cups.

They did turn out great, though. Soft and moist with a good flavor. My
husband even ate a few! And he's not low-carbbing and typically avoids
special things I make. He said they are good and I should make them more
often. I like the recipe because it is all real ingrediants and I didin't
have to buy anything special, which I avoid doing. I grind my own soy
flour. Yesterday I had a hot muffin with melted butter on it. Today I'll
try one with cream cheese.

What is "Low Carb & Loving It"? What flour do they use? I'd like to make
these, as an occasional treat, but I probably couldn't -- I tend to
overeat muffins. I've made some low carb muffins before, and they were
pretty good (if quite fibrous), but I ate too many too quickly. I wonder
how well they freeze? That would be an option -- only eat them on
weekends, after a 15-20 mile bike ride.

Low Carb & Loving It is a cooking TV show. All their recipes are available
online.

I bet the muffins would freeze just fine. The recipe supposedly only made
6, which I thought was a good number so that I wouldn't be tempted to
overeat them before they went bad. However, it made 12 for me. But since
hubby likes them, he is really polishing them off. So thoughtful, he is!
The recipe uses soy flour.
It ends up being 8 carbs per muffin (well, 4 carbs for mine, I suppose)

Just to see George Stella photos is a motivator.

Muffins will freeze well and keep them out of sight and handy with needed.
Use cupcake papers and tins for ease.
microwave for 30 seconds, spread with cream cheese before thawing to prevent
a mess! what a treat!

They also keep quite a long time in the refrigerator. One thing I have
noticed is
most LC baked goods, unlike regular baked stuff, don't last very long
without refrigeration.
