Tried the Faux-mashed Potatoes

Default Tried the Faux-mashed Potatoes

My wife brought home a packaged half head of cauliflower the other night.
When I noticed it, I suggested that we make up a batch of the faux-mashed
potatoes. I have the South Beach Diet book, which has a bunch of great
recipes.

All we did was microwave the cauliflower with a small amount of water.
Placed it in the food processor, created a puree, then addedabout 1
tablespoon of butter, a small amount of whole milk (didn't have any half and
half or heavy cream) and salt and pepper to taste. I thought it was
delicious!!

Next I want to see what happens if I substitute olive oil for the butter and
add some fresh garlic - could be like garlic mashed potatoes.

I found myself snacking on it cold last evening....

i would guess that while olive oil might taste good, it's going to have
a less-than-desirable effect on texture. it's just a guess, though

Try "Faux-Potato" Salad too. It is wonderful! My non-LC husband asked me
to make it all summer instead of regular potato salad.

FYI - you don't need milk or any liquid to make fauxtatoes. I use
about half a stick of butter for 2 bags of frozen cauliflower, which I
steam. Drop it in frozen and it only takes about 6-10 minutes. I
also throw in some spices and/or chicken bouilianne (sp?). Add
shredded chedder while it's hot and make cheddard fauxtatoes! Add
bacon bits and sour cream when you server it. YUM!

I hope you used cauliflower, lol.. but in any case.. I take a clean
dishtowel and dump it on it after I drain it, then wrap it up and squeeze
out the rest of the water.. works great.

My fauxtatoes came out a little watery. I cut up a head of cabbage and
steamed it. Maybe it absorbed some of the steam...

Try adding some cream cheese and sour cream and some onion and garlic
salt... definitely delicious! (minced onions are good too!)

It is delicious. Add some browned onions for extra wonderfulness.

I add an egg and bake it sometimes. It gives it a firmer, more
"Potatoey" texture, more like real mashed potatoes. (One large egg
for a full head of cauliflower.) Baking also helps dry it out a bit; one
comment we hear about fauxtatoes quite often is that turns out a
little wet. Add the egg, spread in a casserole dish that has more area
than depth, and bake at 350F until it starts to brown a little around
the edge. You can also top with cheese near the end.

There are endless variations that you can try!
