Yeah - I think so too. Risk assessment, plan, target achieved!

I no longer do the Pad Thai which I used to love


I'm approaching this low-carb thing from a diabetes viewpoint, so it might
not work the same way for you - but I've discovered that Pad Thai made with
buckwheat noodles does almost nothing to my glucose levels. It's still on as
a regular favourite!

But where do you get pure buckwheat noodles? It seems like the last
time I was looking for them, the main ingredient was still whole wheat
flour.

From a speciality Chinese shop in the middle of Ipswich, UK. They're Korean,
so might be available in a range of Asian cooking shops?
