Default Greek Easter is only 7 weeks away!!

Anyone have plans for LC versions of favorites?

I am going to make (for myself only) LC Spanikopita by leaving out the
phillo ( and cooking the ingredients in the cups of a muffin tin to make
them like little mini-quiche style. Whatdya think? I'll make real
spanikopita for the gang.

I will also wrap feta cheese w/grape leaves and fry them up a bit.

I will cry as I turn away the kouropiedes and baklava. No - I'll be
strong....

My mom made me meat-only koupepia (that's Cypriot) that were good, maybe
she'll do it again. No dolmades for me I guess.

Well, I have to make it through American Easter first...that's pretty soon -
I am going to 2 big family Easter celebrations/meals in a row. Sat & Sun.

Is tiramosalata low carb? I have to figure out if my baba ghanouj is too.

It's possible to make a lower carb tiramisu, but not easy.

I do, however, have a low carb recipe for a tiramisu cheesecake, if
you'd like it.

I will be eating lamb (of course) on Easter Sunday, when we go to the Greek
Church BBQ. I plan to skip the potatoes and bread, and instead load up on
salad, olives, and eggs. I am known for my killer tzatziki (yogurt-garlic
dip), and it is fairly low carb and quite delicious.

Speak for yourself, for me it's the koulourakia that always get me :-)

Hi Nanner,
Your spanakopita sounds like a good idea, I ought to try that. Thanks.
My weaknesses this easter will be me pining for the koulourakia and
tsoureki. Tsoureki is my favourite to have toasted with a bit of butter,
some feta and a cup of coffee for Easter breakfast.
My aunt also makes wicked tiropites and arnopita. Those too will be
difficult to resist. In all likelihood I will indulge a bit.
Of course I'll have lots of bbq'ed lamb, tsatziki and break a few eggs.
As for Taramosalata, it's not low carb if you put the bread crumbs or potato
in it. I guess if you could make do without putting too much in, then it
may be ok.

Yea, that's a pretty accurate picture of my family.

Notice at St Patty's DAy they give the food away - .25/lb for cabbage, 1.49
for corned beef! Wouldn't it be nice if the lamb was suddenly 1.49/lb for
Easter?

I never knew what was in it!

Hi Nanner!

Although we do an American Easter, I do a Greek style leg of lamb
(rubbed with olive oil, red wine vineager, garlic, dill, oregano).

I'm not too far from Tarpon Springs, Florida. Lots of great greek food
all around. Love the local gyros and souvlaki. I was never a big
fan of their honey-laden pastries, but the grilled meats and fish are
incredible!

Just curious - is your name a Zappa reference? I used to use that as an
alias back in my wierd college days.
