How about making some merangue with artificial sweetener, folding in
some chopped nuts, then dropping tablespoons of it on a cookie sheet
and drying them in a warm oven.

Find a recipe for some sugar free macaroons.

I can't remember if eggs are a problem for you so, if not, give this a
try substituting the LC milk with Silk Soy Milk. Because of the small
amount it shouldn't make much of a difference in the taste. Well, I
didn't notice any difference!

Chocolate Souffle Crepe

2 eggs
1 heaping TBSP unsweetened cocoa
2 TBSP DaVinci SF chocolate syrup
2 TBSP LC milk
(The last 3 ingredients can be adjusted to taste)
Chopped nuts, type and amount to taste

Mix thoroughly. Pour into an 8" omelette pan and cook without stirring
on a burner set to med-low, or about 3 1/2. As the mixture starts to
set, cover and turn heat down to low 'til completely set. Transfer as
is to a dinner size plate and top with fresh, sliced strawberries and a
drizzle of whatever sugar free syrup sounds good to you.
