Default Nancy Huffines LemonSquares

I Made your lemon squares today.
I needed something for company to go with tea.
And let me say.. THANK YOU
they went over so well..... they are truly de-lish !

The hardest part was going to be for me to keep my fingers out of them
... So I sent the majority of them home with my visitors.. Keeping only
2 for myself.

It's a wonderful recipe.. and sooooooo easy too.
it will be permanently in my recipe file

Thanks Karen, glad you enjoyed them. Most of the low carb stuff I've baked,
I have pitched into the "can") Once in awhile something good happens. This
and my Key Lime pie have turned out best so far.

Hi Karen,

Thanks for the review. I've got Nancy's recipe printed out, and waiting
for me on the kitchen counter. Can't wait to taste the bars later this
evening.

This will be the first low-carb dessert I've tried, aside from sugar-free
Jell-O. G

Well Carol.. I really enjoyed them as did my company.

I have tried Myra's cheesecake (heavenly) .. but my problem as with
all sweets is stopping at just one .
This is another for that category ..lol .. hence my reason for sending
the left pieces home with the company.
These are not Super sweet... Just right in my opinion.. but they still
called my name over and over to eat them LOL !!

baked the bars at 350, and they came out perfectly. Light as a feather.

time. I entered almond flour, oat flour, and xanthan gum into MasterCook,
so I think it should give a pretty good carb count. Each bar contains 1
gram of fiber, so the net carbs are 5 per bar.)

Nancy's Low Carb Lemon Squares

Recipe By :Nancy Huffines (asdlc)
Serving Size : 16 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
---Crust---
3/4 cup almond flour
1/4 cup oat flour
1/2 cup Splendaź granular
1/2 cup soft butter
1/2 teaspoon xanthan gum -- optional
---Filling---
2 large eggs
1 cup Splendaź granular
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons lemon juice

Preheat oven to 350 degrees F.

Blend crust ingredients and pat into a Pam sprayed 8x8 baking pan. Bake for
about 18 minutes or until very lightly browned and set (not shiny any
more).

Beat the ingredients for the filling (topping) for about a minute, pour
evenly over the pre-baked crust and bake again for about 15-20 minutes or
until barely browned and set. Let cool at room temperature, cut into 16
even squares, eat one and cover the rest. Keep cool in the refrigerator.

Wouldn't hurt to add a teaspoon of lemon extract and the finely
shredded zest from a lemon or two to the crust, as well.

Or make a lemon crust and an orange filling. Or some other permutation
of available citrus flavors.

I'd also like to try this with orange, instead of lemon. You could
probably make a lime version, as well. Actually, the flavor possibilities
are nearly endless.


Orange will require more extract, juice and zest than lemon. It tends
to be a good bit quieter in finished foods. A scraping of grapefruit
zest will sparkle most other citrus fruit, just don't use too much
because it's bitter. I generally use them in a ratio of 1 grapefruit
to 3 anything else.

Kumquats and loquats are both good for something like this. Strong
flavors. Have to wait until they're in season.

Thanks for the wonderful suggestions, Bob! I'm also thinking of making
this in December, omitting the lemon, adding rum and vanilla extract, and
just a touch of nutmeg. Egg nog bars!

I'm irresistably drawn to Nancy's bars. The crumb base is out of this
world. I could just make a batch of the base and scarf it down. So
buttery and delicious!

Must. Hide. The. Bars.
