Pot Roast with nuthin'

Default Pot Roast with nuthin'

I used to do pot roast with onion soup mix, potatoes, carrots and onions.

Tonight I made one with nuthin' - just the beef w/some pepper and garlic
powder and I only used water (not broth or wine or anything) It tasted
really good - I was surprised, thought it would be blah. In the last 1/2
hour I did throw in a handful of baby carrots and they were tasty.

What veggies would you/do you put in a pot roast these days?

I put in onions and carrots, limit myself to one small/medium onion and
about one carrot per meal. If I have potatoes I throw some in for my SO.

season with sea salt & pepper .. that's it. Yes it tastes better to me
than it did with the spuds & onion soup.

I forgot to mention that I do mine in red wine, just like always.

I also use red wine or beef broth (add a tablespoon of red wine vinegar if
using broth) and add carrots for the last half hour and zucchini for the
last 10 minutes, no onions. Then I make gravy as usual except using
ThickenThin not/Starch instead of corn starch.
