Default Food & Exercise -- 11/6/2004 (yesterday)

Food (all at home):

8:45: 2 poached eggs on 1 slice whole wheat toast w/ 3 slices melted
f/f cheese; 1 snack-sized peanut butter cup

12:00: 108g turkey meatloaf w/ 1 slice melted f/f cheese

3:00: 1 oz. mixed nuts; 13 mini sugar-free meringue cookies (a whole
35 calories worth, but not that good)

6:00: 10 grape tomatoes

7:30: 156g roast chicken breast w/ 2 tbsp gravy; 1/2 large baked yam;
135g Brussels sprouts; 1/4 cup homemade cranberry sauce (made w/
splenda)

10:30: 1/4 recipe of "pumpkin bake" -- pumpkin pie filling made with
f/f evaporated milk instead of the regular kind, and splenda instead
of sugar, baked in casserole dish w/ no pie crust (Low cal, healthy,
and tasty)

Totals: 1446 calories, 44g fat (27%), 145g carbs (40%), 121g protein
(33%)

Averages for the week: 1491 calories, 31% fat, 38% carbs, 31% protein

Exercise: None to speak of. Did some grocery shopping; otherwise
pretty much lounged around all day.

This sounds good. Do you have a recipe for it?

I just followed the directions on the canned pumpkin, substituting
splenda for the sugar and fat-free evaporated milk for regular
evaporated milk. The other ingredients are 2 eggs plus some spices
(salt, cinnamon, ginger, ground cloves). I sprayed a casserole dish
with a little I Can't Believe It's Not Butter, then just poured it in
and baked it. A quarter of the casserole has just 133 calories, with
3g fat, 19g carbs, and 10g protein. Heated up a bit in the microwave
and topped with a dollop of fat-free Cool Whip, it's very tasty.

I've seen this recommended in SBD groups as "crustless" pumpkin pie. It
definitely sounds worth trying. BTW, if you *need* some kind of crust,
crushed pecans work well in a thin layer, though they do add calories and
fat to the mix.

I don't feel any need at all for a crust. I'm not really that into
dough; often if I eat pie I'll leave most of the crust -- and that was
equally true before I became concerned with weight loss. I do like
graham cracker crust, though :-).

Same - though I don't care for graham cracker crust either. I was always
happy with heating up a bowl of pie filling. Now I do the same thing except
I don't put any sugar in it
