Hi folks,
I just thought it might be nice to start a thread with recipes for salads under 300 kcal. I eat a lot of salad nowadays, but there's not a lot of variety. I'm hoping for some creative and delicious recipes. I'll start: 130 g romaine lettuce 22 kcal 4 Tbsp Kraft's Low Calorie Italian dressing 20 kcal 150 g tuna 135 kcal ---------------------------------------------------------------------------- 177 kcal |

Cranberry Turkey Salad
Ingredients: 2 cups cooked turkey breast, cubed 4 cups romaine lettuce, torn into small pieces 1 large red apple, cored and cut into small pieces 1 orange peeled and segmented (or use a small can of mandarin oranges) 1/4 cup dried cranberries 3 tablespoons walnuts, coarsely chopped 3 kiwifruit, peeled and sliced Dressing Ingredients: 1 cup jellied whole-berry cranberry sauce 1/4 cup frozen orange juice concentrate, thawed Preparation: 1. In a medium bowl, combine turkey, apple pieces, cranberries, orange, and walnuts. 2. In a small bowl, mix cranberry sauce and orange juice concentrate. 3. Arrange lettuce leaves among four plates. 4. Just before serving gently toss turkey mixture with dressing. 5. Garnish with kiwi slices. Yield: 4 servings Nutritional Information: Per serving: Calories 398, protein 31 g, fat 5 g, percentage of calories from fat 11%, carbohydrates 59 g, cholesterol 70 mg, fiber 6 g, sodium 84 mg. I'm going to do a variation of this salad to make it lower cal and for one person. My variation: 50 g grilled chicken breast 83 kcal 2 cups romaine lettuce 16 kcal 100 g mandarin oranges 38 kcal Dressing: 4 tbsp balsamic vinegar 56 kcal -------------------------------------------------------- 193 kcal |

That's depressing..
1- Make your own low cal dressing, they taste much better than those garbages.. like Garlic? press some garlic with a little orange or lime juice, 1 tsp of olive oil... there you go..Want an asian flair? soy sauce, garlic, ginger and sesame seed oil, switch the tuna for teriaki chicken or pork... mmmm 2- veggies veggies veggies, all colors, all textures... lettuce and tuna? eeeewww Cut a bunch of cherry tomatoes in halves ! Chop peppers of all colors, cucumber.. grapes... anything! For a little crunch.. add some sunflower seeds, pine nuts.. roast them first.. mmmm You want a salad to LOOK good, SMELL good and TASTE good.. you want different textures... I went shopping today.
I'm going to make a salad with: Baby spinach Red onion Mandarin orange Raspberry vinaigrette at 10 kcal/tbsp I decided against almonds, too fatty. |

A tablespoon of roasted slivered almonds will contribute a very small amount of calories, but may contribute alot of great taste and texture... |

Low cal salads -- One
Do you like avocado? It would be great in this salad....along with the
slivered almonds. You could also add a little sliced grilled chicken breast and make it a complete meal. This is often my lunch, and I never tire of it. -- Sue |
