Christmas treats (recipes)
As requested by Lee, here are a couple of recipes/ideas for Christmas
treats. I can only give NZ/Aus points for them though, sorry. Has anyone else got Christmas recipes they'd like to share? First thing, I made meringues yesterday, raspberry choc chip with crushed candy canes mixed in. They are sooo good. I'll definitely be making these again and they're so low in points. The next two recipes are ones that I'm planning to make next week, but haven't yet tried. I hope they're as good as they sound. Mocha Fruit Cake 1kg mixed dried fruit 2 cups strong black coffee 150g fruit and nut chocolate, roughly chopped. 2 cups self-raising flour 1) Soak the fruit in the coffee overnight. 2) Preheat oven to 180 degrees celsius. Coat a 20cm x 28 cm tin with cooking spray. Line the base with baking paper. 3) Mix together the fruit mixture, chocolate and flour. Spoon mixture into the prepared tin. Bake in oven for 50-60 minutes or until cooked through. Serves 25 2½ points per serve Rum Balls 1 can skim condensed milk 10 Vita Brits, or Weet Bix, crushed. 1 cup dessicated coconut 2 tsp cocoa 1/4 cup rum 1/4 cup chocolate sprinkles, for coating 1) Combine all ingredients in a bowl and roll teaspoonfuls of the mixture into balls. 2) Roll each ball in sprinkles and refrigerate until firm. The rum balls look good. Perhaps I could turn them into brandy balls with
some of the Christmas cake brandy.... I'm not a huge brandy OR rum fan, unless they're in some type of Christmas treat. I might have to test it out on half a batch and see how I go. I have been informed by the DBF that rum balls have to have sultanas in them. I think he's got rocks in his head. Apparently his mother used to have a great recipe for them which she has since lost. Now she tries to remember the recipe every Christmas with varying success.
