Recipe: LC Pizza tonight
Hello, all:
Well, I read someone's post about the sausage crust low-carb pizza, and tried it tonight. YUM yum and more yum! Husband (on Atkins with me) and daughter (not dieting) both agreed! Here's how I made it: 1# mild bulk pork sausage (with no sugar) 1 tbsp Atkins baking mix 1 egg 1 tbsp oregano I combined these four ingredients in a bowl, then placed half of the mixture in a COLD 12-inch non-stick fry pan. I placed a piece of waxed paper on top and used this to press the sausage mixture out flat and to shape the edges. Remove the wax paper. I then placed the pan on medium heat, covered and let it cook for about 5 minutes. Uncover, flip (if it looks like it's breaking up, slide it onto a Pam-sprayed pizza pan and then flip over back into the fry pan), cover and cook another 5 minutes or until it's nice and crusty brown. Slide off onto a Pam-sprayed pizza pan. Repeat with the second half of the mixture (rinse fry pan under cold water to get it to cool down before you put the 2nd batch of "crust" in) for two 10-inch pizzas. Put whatever toppings on you want -- onions, green peppers, mushrooms, black olives, oregano, mozzarella cheese. I found Ragu Pizza sauce has 3 carbs per 1/4 cup, so I used 2 tbsp of sauce on each pizza. I used grated Asiago and Mozzarella cheeses. I baked at 400 degrees for 7 minutes, then placed under the broiler for another 2-3 minutes til the cheese was bubbly and brown. I'm estimating 3 carbs per "slice" -- four "slices" per pizza. We each had two slices with a salad. It's not Pizza Hut, but it's darn good! I'm really glad you liked it. I do not miss pizza anymore because of this
recipe. We have it once a week or so. Believe it or not, it's also good with Ragu Alfredo sauce (4 carbs per 1/4 cup), cooked chicken, brocolli, onions, black olives and feta cheese. Hi, Tried this recipe for dinner tonite and it worked out great!! Even my husband who does not eat low carb said it was very tasty! I did it a little differently but followed the cooking directions. I used a pound of Italian sausage mixed with the egg, oregano and 2 tbsp of LC baking mix. Made one 14" crust with it, and topped with our favorite toppings. Great cooking instructions!! Thanks!! It was so filling we could only eat half of it. |
