The study began because someone noticed that the "aftertaste sting" of
ibuprofen and olive oil was quite similar.

Breslin, a sensory scientist at Philadelphia's Monell Chemical Senses
Center, and his colleagues then decided to analyze the chemical
compounds within olive oil to find out what was causing the sting. Most
of these compounds remain unnamed.

One compound, which the researchers named "oleocanthal" after the root
words for "olive" and "sting," was found to inhibit certain enzymes that
can lead to inflammation and the dull, continuous pain that often
results from swelling.

The over-the-counter drug ibuprofen, sold under such common trademarks
as Advil, Motrin and Nuprin, inhibits the exact same enzymes that
oleocanthal does.

It is hypothesized that this chemistry may be part of the reputation of
Olive Oil as being "healthy".
