Squash seed question
While preparing spaghetti squash I noticed the seeds look a lot like pumpkin
seeds which gave me the idea to roast them sometime. Has anyone done this with spaghetti squash seeds or any other seeds besides pumpkin ones? I haven't googled it yet, but they're probably edible, right? BTW, DH's idea to test if they were edible was to give some to the dog and see if she would eat them. Umm, right, the dog thinks dried out cat turds from the litter box are edible... Jenn not actually planning to use the dog for a guinea pig, DH was joking so please don't get upset with me |

Saute 8 oz. sliced mushrooms in some cooking spray, add 1 pkg of Boca crumbles and cook until browned, add 1 cup of spaghetti sauce (Newman's Sockarooni is my fave), and 1 cup of spaghetti squash that has already been prepared in the oven. Heat until warmed. Top each serving with 1 oz. reduced fat mozzarella cheese. 30% fat/37% carb/33% prot and approx 240-280 cal depending on the brand of sauce you use. Fast, filling (6.5 g fiber), and definitely SBD friendly. Jenn |
