Pork Rinds are not only good as a snack, they are used in many LC recipies as "breading" on fried foods. But, be careful. I did a month of Induction and lost 20 pounds eating meat, cheese, and lettuce (almost exclusively). To my surprise, I just wasn't interested in snacking. Then I discovered pork rinds, which seem like they would be legal for Induction. Now I have gone back to my snacking ways. If I buy them at the grocery near my job I can go through almost a whole bag during the 40-minute car ride home. I get them, after eating a meal, and munch right through them while I'm watching tv. They have really screwed up my dieting rhythm, adding hundreds of calories to otherwise great days. I know I have to just quit buying them. Anyways, forewarned is forarmed.
