Almond Pound Cake - workout miracle.
OK - it isn't a miracle, but it's what I've been using before my
workouts. It gives me the energy to complete the workout, tastes good, and has just enough carbs to keep my trainer happy. Just wondering, are you making it with artificial sweetener? I saw that
recipe and was thinking at some point trying it, but I don't do fake sugar. I love pound cake and it sound good with almond flour. Almond Pound Cake - workout miracle.
Here are some of my faves...
ALMOND POUND CAKE (LOW CARB) 1 cup butter softened 1 cup Splenda 5 eggs 2 cups almond flour 1 tsp baking powder 1 tsp lemon extract 1 tsp vanilla extract Preheat oven to 350°F. Cream butter and Splenda. Add eggs, one at a time, beating after each. Mix almond flour with baking powder; add to egg mixture a little at a time. Add extracts. Pour into 9" greased cake pan. Bake for 50-55 minutes. 8 slices come to about 5.8 carbs each. Optional: Serve with whipped cream or strawberries. Some variations: 1. Add cocoa and elimnate lemon extract for chocolate pound cake. 2. Add banana extract instead of lemon and some chopped nuts for a banana nut cake. "Candace" wrote in message ... Thnaks for the recipe..I made it last night and mmmmm
I varied to suit my tastes... I used liquid splenda for sugar. I ground my own almonds so the texture wasn't as smooth as flour, I used 1 cup of the ground up almonds, 1/2 cup of ground flax seeds and 1/2 c coconut. I used 1 T of almond and 1 T of vanilla extract. Oh it feels so good to bake again, I stopped becasue the bulk splenda adds so many carbs, now I can have my cake and eat it too and it was plenty sweet. Next time I might add a bit of cream cheese and maybe some walnuts. Just can't overdo or make it too often cause its things like this that are my downfall.
