After seeing the values for soy flour .. It got me starting to think

Are soy products legal low carb fare? Whilst digging thru the organics
section of Zehr's .. (found low carb pasta btw!!), I saw soy ice cream.

Would that be legal low carb fare??

it depends: are the carbs per serving as listed on the label low enough
to fit into your plan? if so, then the answer is yes.

What was the carb count? There is no-one policing what you eat.

Yes, for one thing, it would have to use artificial sweeteners
too.

carb count in soy products: Read the label. Read the label. Read
the label.

I've found soy burgers and soy milk with 4 carbs per serving and I've
found them with 20 carbs per serving. And that's just the stuff that's
not sweet!

I seriously doubt you'll find any low carb soy sweets made with
splenda. There's just not much of a market for it. Buy the Breyers
Carb Smart, it's great. Or get an ice cream maker. Best $40 you'll
ever spend.

Re raw soy ingredients, I've found soy powder (AKA soymilk powder) in
my local bulk bin natural food store (Rainbow for those who live in
the Bay Area). This is great for low-carb baking.

They also have in the bulk bins:
soy protein isolate (specified in some recipes, though it leaves me
feeling yukky if I eat too much)
soy flour (lower carb than regular wheat flour, but not super low carb
or super tasty either)
rice protein powder (ditto)
whey protein powder (I seem to react OK to this, but it's hella
expensive)
vital wheat gluten (a low carb wheat product that helps bread and
other baked goods stick together)

I have heard of wheat protein isolate as well, but haven't seen it.
