which is exactly what the original recipe calls for.


Well, it actually said "very little oil" over "high" heat. Oil
breakdown is easy to see - it smokes. If that happens, toss it.

Using a high-temp oil like refined grapeseed. This starts to
decompose, or smoke, at 420 degrees F.

Unrefined grapeseed has a "smoke point" of 320 degrees.

No oil smoking, you're ok to go, and should survive till 105, barring
all other causes of death ;-) YMMV.

Not getting into the basic argument here, but as I was reading
this thread, I was thinking more of the fat that exudes from the
cheese.

because it also becomes overheated...


Sooo.... fat is never ever to be browned? Makes cooking with it tough.
Personally, I'll take my chances with the cooked cheese ;-) 100% raw
diet is not my thing.
