Today, I had a big salad for lunch w/ greens, carrots, broccoli,
Brussels sprouts, celery, and cucumbers. And for dinner I had an artichoke. This more than met my (very modest) goal of two veggies per day. Chris 262/130s/130s started dieting July 2002, maintaining since June 2004 |

Their flavor is much too delicate. In fact, I rarely boil any vegetable. I usually prefer steaming. With leeks, I usually saute them in a little butter or olive oil and/or chicken stock. Of course, chop when raw and rinse thoroughly, as they tend to gather a lot of dirt and mud with the layers. Once they're limp, they're done. They then can be added to scrambled eggs, eaten on their own or mixed with other veggies. Martha |
