I meant to write 'by *it*self,' of course. :-(

Lunch - lettuce & tomato on my veggie burger
salad with green peppers, celery, beets, mushrooms, carrots,
grilled squash

Dinner - I was just too lazy to fix anything other than a sandwich and
yogurtg

Today, I had a big salad for lunch w/ greens, carrots, broccoli,
Brussels sprouts, celery, and cucumbers. And for dinner I had an
artichoke. This more than met my (very modest) goal of two veggies
per day.

I would never boil leeks. Their flavor is much too delicate. In fact, I
rarely boil any vegetable. I usually prefer steaming.

With leeks, I usually saute them in a little butter or olive oil and/or
chicken stock.

Of course, chop when raw and rinse thoroughly, as they tend to gather a
lot of dirt and mud with the layers.

Once they're limp, they're done. They then can be added to scrambled
eggs, eaten on their own or mixed with other veggies.
