Default REC; Oriental Beef

Just wanted to share a recipie I've been enjoying, I don't have the carb
count, but it's pretty safe as long as you're not in induction (and actually
I did it then too and it didn't seem to bother me)

Oriental Beef
Ingredients
1 TBSP cooking oil (I like peanut)
1 pound beef round steak, sliced diagonally into 3 inch pieces
1/2 cup beef stock
2 teaspoons soy sauce
1 tablespoon butter
3/4 cup onion, diced
3/4 cup celery, diced
1/4 pound mushrooms, chopped
1/4 pound fresh spinach, rinsed

Directions
1. Heat oil in a wok or large heavy skillet over medium-high heat. Add beef,
and cook until evenly brown. Stir in beef stock, soy sauce and butter. Add
onion, celery and mushrooms. Cook, stirring, until desired degree of
"doneness". Add spinach, and cook for 2 more minutes.

It sounds good. I do a stir fry with chicken, bok choy, peppers,
onions, garlic, ginger (cook the chicken, garlic and ginger first in a
small amount of oil and then remove and set aside. Next cook the
veggies in a small amount of oil and add the chicken back along with
the sauce ingredients. Cook a few more mintues to blend it all
together.)Sauce: a few Tablespoons of soy, a teaspoon or two of
splenda and a little chicken broth and a tiny bit of cornstarch.
